Chocolate Puffed Quinoa Bars

  • 1/2 cup Puffed Quinoa
  • 1/3 cup Slivered Almonds
  • 2 teaspoons melted Coconut Oil
  • 1/8 teaspoon Salt
  • 1/4 teaspoon Cayenne Pepper optional
  • 2 tablespoons melted Vegan Chocolate Chips


  1. Melt chocolate Chips in a double boiler or water bath.
  2. Place all ingredients in a small stockpot and heat over medium heat. Stir constantly until well mixed. Continue stirring for about 3 - 5 minutes being careful not to burn chocolate.
  3. Remove chocolate quinoa mixture from heat and spread into a rectangle (4 1/2" by 6") on parchment paper.
  4. Refridgerate for about 30 - 60 minutes until hard. Cut into 6 bars using a sharp knife.
  5. Store in an airtight container in fridge.
