    Cranberry Chocolate Muffins

    Thanksgiving is tomorrow. I would love to be more excited but since I won't be in the States this year, it just doesn't feel the same. I come from a big family. Usually Thanksgiving consisted of a family get-together of around 20 people. I think this is why I can't justify slaving over a large Thanksgiving meal for just four people. One of those people is a four month old baby. So that leaves only three people to feed. One of those three people is a two year old which would probably only eat about a tablespoon of each thing served. Now we are down to two.

    So you can see my dilemma. It's sad and doesn't seem worth it. I do think I will make an apple pie though, maybe some sweet potato mash too. It just seems like the least I can do. Hopefully next year, we'll be back in the US to celebrate Thanksgiving traditionally (minus the turkey).
    One thing that many people enjoy is the cranberry sauce. I am not one of those people. However, I love dried cranberries. I know, I know. It's not the same thing. Usually I don't like dried fruit but I can eat dried cranberries like potato chips. What's even better than dried cranberries? Putting them in a muffin with chocolate. Yum.
    Do make sure you add this delicious Chocolate Frosting to it.
    Cranberry Chocolate Muffins
    makes 12
    Prep time: 10 minutes
    Bake time: 20 minutes
    Ingredients:
    • 1 cup Whole Wheat Flour
    • ½ cup Whole Cane Sugar
    • 1 teaspoon Baking Powder
    • 2 Bananas (mashed)
    • ½ cup Vegetable Oil
    • ½ cup Soy Milk (or other plant based milk)
    • ½ cup Cranberries (dried)
    • ½ cup Dark Chocolate (chopped or Chocolate chips)
    • ½ teaspoon Salt
    • Frosting (optional)
    Directions:
    1. Preheat oven to 355F (180C). Grease and flour muffin pan or line with muffin cups.
    2. Cream together sugar, mashed bananas, oil and milk in a medium sized mixing bowl. Set aside.
    3. Mix flour, baking powder and salt together. Add to bananas mixture with a wooden spoon. Fold in cranberries and chocolate.
    4. Fill each muffin cup ⅔ full with mixture and bake in oven for 20 minutes.
    5. Remove from oven and let cool completely before decorating with frosting.

    • ½ cup Vegetable Oil
    • ½ cup Soy Milk or other plant based milk
    • ½ cup Cranberries dried
    • ½ cup Dark Chocolate chopped or Chocolate chips
    • ½ teaspoon Salt
    • Frosting optional

    Instructions
