    If you've ever wanted to eat an entire cauliflower by yourself then THIS is the recipe you need. It's tough to not eat all this turmeric roasted cauliflower by yourself but it's even harder to share it. Your choice.

    Before we get ahead of ourselves though, let's back up this cauliflower train.

    Cauliflower. So simple. So healthy. So delicious. So hard to mess up!

    Cauliflower can be used in so many different ways. Add it to soup to make it extra creamy without any cream. Make a low-cal hummus. Whip up a quick casserole. But why not just make it the star of the dish by roasting it?

    My mom and I have been roasting cauliflower for quite a while. There are so many different ways to add flavor to roasted cauliflower but I wanted to share my Indian-inspired Turmeric Roasted Cauliflower recipe first.

    Once you see how easy it is to make, it will be your go-to cauliflower recipe. You can find some quick, helpful tips on cauliflower season, picking, storing and nutrition here.

    No fancy cookery here! While you can roast the entire cauliflower head, I prefer to cut it into slices or florets to cut the cook time down to only 20 minutes.

    Just arrange the sliced cauliflower only a baking tray. They don't all have to be the same size. No biggie.

    You'll then want to mix your turmeric/curry/garlic/olive oil goodness and coat each slice with it. If you like to paint, you'll love this. Bonus points if you get your kids to help you with this part! They'll also be more likely to eat it then too.

    Looks similar but on the right, you'll have deliciously tender, roasted cauliflower right to be eaten!

    But not so fast! Let's add just a couple of extra touches to take the cauliflower from good to GREAT!

    You can entirely skip this part and eat the cauliflower straight from the baking tray if you can't wait. However, adding some fresh cilantro, a few chili peppers, an extra sprinkle of salt and a squeeze of fresh lime juice is so worth it.

    ....and Voila! A pretty Turmeric Roasted Cauliflower dish :)

    Turmeric Roasted Cauliflower

    This healthy, oven-baked Turmeric Roasted Cauliflower Recipe is an absolute crowd-pleaser. Quick n' easy to make with garlic and curry spices, it's a perfect side dish or can even be the main course!

    Prep Time 5 minutes
    Cook Time 20 minutes
    Total Time 25 minutes
    Makes 4 servings
    Calories 94 kcal

    Ingredients

    • 1 small Cauliflower I used a small organic one which weighed about 1 lb or 465g without the leaves.
    • ⅛ cup Olive Oil
    • 1 teaspoon Turmeric ground
    • 1 teaspoon Garam Masala use one without added salt!
    • ¼ teaspoon Salt plus more to taste
    • 1 clove Garlic minced
    • Cilantro fresh, for garnish
    • Chili fresh, for garnish
    • Lime Juice fresh, to taste

    Instructions

    1. Preheat oven to 425°F (220°C) and line a baking tray with parchment paper.

    2. Remove the leaves from the cauliflower and cut into slices. Some of the cauliflower may fall apart into smaller pieces. This is totally fine. Lay the cauliflower slices and florets on the baking sheet. (See notes)

    3. In a small bowl, add the olive oil, turmeric, garam masala, salt, and minced garlic. Mix until spices are incorporated well into the olive oil. 

    4. Brush the olive oil-spice mixture onto each piece of cauliflower. 

    5. Bake the cauliflower in the oven for 20 to 25 minutes until the cauliflower is cooked throughout. 

    6. Place the cooked cauliflower on a plate and garnish with fresh cilantro, chili (optional) and squeeze of lime juice. Serve hot. 

    Recipe Notes

    1.) You can also cut the cauliflower into florets. Depending on the size of them, the bake time may need to be adjusted.
