    Green Power Smoothie

    At the start of my vegan journey, Max and I made drinking a breakfast smoothie part of our daily routine. We both felt amazing incorporating this into the beginning of our day.

    However, after 2 weeks Phillip (4mts) starting making our nights into living nightmares. Thank you 4 month sleep regression! He started waking up 7x a night. We were exhausted and no longer found the energy to wake up and chop vegetables and fruits It was so much easier to just make a cup of tea or eat cereal instead. Something quick and easy without much thought.

    We are now trying to start again. Phillip still wakes during the night but not as often. We manage to make a breakfast smoothie about 3x a week, which is definitely better than not at all.

    The key to a healthy smoothie is more vegetables than fruits. Though fruits have lots of nutrients, they are also loaded with sugar. Our go to smoothie has simple ingredients that we always have in the house and it tastes delicious. Give it a try and let me know what you think.

    This smoothie keeps me full until lunch and has a great number of health benefits.

    Here are just a few notable mentions:

    • Ginger: aids digestions, increases blood circulation, anti-inflammatory, protection against colorectal cancer, immune-boosting
    • Spinach: lower blood pressure, credited with anti-aging effects in vision, brain, and cardiovascular functions
    • Cucumber: improved complexion, cancer fighting
    Green Power Smoothie
    makes 2 large smoothies
    Ingredients:
    • 1 cucumber ( washed and 60% of skin removed)
    • 1 Apple (needs to be sweet not sour, stem and core removed)
    • large handful of Baby Spinach
    • 1 tablespoon Lime Juice
    • 1 teaspoon fresh Ginger
    • 1 cup Crushed Ice
    Directions: 
    1. Place all ingredients into a blender. Depending on the power of your blender, you might need to chop vegetables and fruits into smaller pieces.
    2. Blend and enjoy!

    Notes: 1) You may want to adjust the amount of ginger. I tend to add a good tablespoon but my husband finds this overwhelming. Start off with a little amount and add more as you blend to find out how much you prefer.

    • 1 cucumber washed and 60% of skin removed
    • 1 Apple needs to be sweet not sour, stem and core removed
    • large handful of Baby Spinach
    • 1 tablespoon Lime Juice
    • 1 teaspoon fresh Ginger
    • 1 cup Crushed Ice

    Instructions

    1. Place all ingredients into a blender. Depending on the power of your blender, you might need to chop vegetables and fruits into smaller pieces.
