    Maple Dijon Salad Dressing

    April 19, 2014

I have never fallen in love with a salad dressing so quickly as with this one. I tend to usually quickly make a easy vinaigrette by just adding a dash of olive oil and balsamic vinegar to my salad . However, since I've started making this maple dijon dressing, it has become a staple in our refrigerator.

It all started with having a craving for mustard. That mustard craving turned into a honey mustard craving. What is the best way to replace honey? Agave or maple syrup? I prefer maple syrup. None of this highly processed maple syrup but 100% pure maple syrup. Yep, that's the good stuff. Mmmhm just writing about maple syrup makes me want some waffles now.

Anyway, back to the salad dressing.

I use this salad dressing for nearly everything now. Yes, usually on top of salad but also to dip veggies in. A new favorite way I like to use this dressing (I'll have to write another post on it) is on sandwiches or for a burger sauce. It's a perfectly sweet and spicy kick to liven up any boring sandwich. Even my 3 year old will eat a huge bowl of salad with this dressing. I think that says a lot.

    Maple Dijon Salad Dressing

    Ingredients:
    • 2 tablespoons Dijon Mustard
    • 8 tablespoons Olive Oil
    • 2 tablespoons Lemon Juice
    • 2 tablespoons Pure Maple Syrup
    • ½ teaspoon Salt
    • ½ teaspoon Pepper
    • 1 teaspoon Paprika
    • ¼ teaspoon Garlic Powder
    Directions:
    1. Whisk all ingredients together or place in a salad dressing bottle and shake vigorously.
    2. Serve over salad, veggies, or as a sauce for sandwiches (my favorite. YUM!)
    3. Store unused dressing in refrigerate for up to 2 weeks. Shake well before each use.
This dressing really compliments any salad but I like adding it to simple ones like the one above. It is my easy go-to salad with mixed greens, cucumber slices, cherry tomatoes, red onions, and pumpkin seeds. Delicious!

For some reason, the olive oil does not solidify in this dressing when refrigerated - which is awesome!
